PCOS is something you can't control. Dieting doesn't really Heip. You just kind of have to live with it and others have to find out you are being treated for a hormonal imbalance and you are not just "fat".
Get a lock with a key and keep your room locked whenever you are not in there. If anyone has a problem with that you can let them know that they will have to repurchase or repair anything that is broken or missing.
Put the cat, litter box, and food and water in his room and shut the door. Your roommate will have to clean up his cats messes when he gets home. That is the only way he will realize how much work the cat is.
